Black beans and chorizo soup

Ingredients:

1 cup dry black beans

1 Tbs olive oil

4 pcs chorizo, sliced

2 Tbs chopped garlic

2 medium tomatoes, quarters

1/4 c red wine

3/4 c tomato paste

6 pcs basil leaves

Dash of ground black pepper

Preparation:

Soak black beans in water for at least 4 hrs, then boil in soaking water until beans are tender. Add more water if necessary.

In a seperate medium pan, heat olive oil. Add chopped garlic and saute until golden brown but not toasted. Add the sliced chorizo to garlic and oil, and cook until meat is half done. Add the tomatoes and simmer untill tomatoes are cooked. Add the red wine and simmer for 5 minutes. Mix well then add basil and cook until basil is wilted. Add the tomato paste and mix well and simmer for 5 minutes.

Check beans if they are soft. Continue to boil until beans are soft and well done. Once the beans are cooked, add the tomato and chorizo mixture to the beans. Mix well and simmer for another 10 8 minutes. Add black pepper to taste.

Serve with toasted olive bread with butter.
